Located in the “El Morquecho” plateau, a former property of Cásser, between the Guadalhorce River and the Geva, the vineyard spans 7 hectares. It features a loamy-clay soil, ideal for cultivating red grape varieties. The land has a slight westward slope to catch the last rays of the sun, which ripen the fruit.

All red varieties cultivated include Syrah, Cabernet Sauvignon, and Merlot, along with the white variety Moscatel de Malaga. Their planting system (2×1.4 meters) is denser than what is typically used in Spain and particularly in Andalusia, aiming to create more competition among the different vines to produce a lower quantity of grapes per vine, but with higher quality.

The vines are trained on trellises and are irrigated to control growth and optimize the vegetative development of the shoots where the clusters hang.

The process of Wine creation from Bodegas Perez Hidalgo

Once the fruit has reached its optimal ripeness, the harvest begins, and the grapes are vinified using selected grapes, handpicked and transported to the winery in individual crates.

Vinification is carried out independently for each variety, in stainless steel tanks and at a controlled temperature between 24 and 27°C for red wine vinification and at 16°C for the vinification of dry Moscatel white wine. Once fermentation is complete, the wine is transferred to the winery for aging in French and American oak barrels of 225 and 300 liters, where it will age in wood for 12 or 18 months depending on the destination of the wine; Crianza or Reserva. After the aging period in wood, the wine is bottled and the bottles are stored in crates until the wine reaches an appropriate degree of maturity to be enjoyed.
